Permeate is a valuable by-product obtained in the process of ultrafiltration of subsurface whey in the production of whey protein concentrate.
- A special feature of dry permeate is an increased lactose content up to 90.0% and a reduced protein content (no more than 5.0%). It has a low fat content and contains a high concentration of vitamins, minerals and amino acids.
